My mom's friend K-Mag used to make this when I was little. She's known as "K-Mag" to distinguish her from my "aunt" Kathy and the various and sundry other Kathies in her generation. It was all-season holiday food. Mmmm. Childhood spread with butter.
Or with whipped cream cheese and powdered sugar. Mom still likes to do that, but it's a little sweet for my tastes now.
1/2 c. margarine
1 c sugar
1 t. vanilla
1 1/2 T. sour cream
2 c. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
1 c. chopped nuts (I don't actually chop them. I smack them with a rolling pin.)
1 c. apples, peeled, cored, and chopped small
Cream the butter and sugar together. Beat in 1 egg at a time. Blend in vanilla and sour cream. Mix or sift dry ingredients and beat in. Add nuts and stir in apples. Pour into greased, floured loaf pan. Bake at 325 degrees for one hour.
