Brun Brod (Norwegian Spice Cookies)

1 c. oleo, softened

1 c. brown sugar, packed

1 egg

1 t. cardamom (1 1/2 t. if you realio trulio like cardamom)

1 t. cinnamon

1 t. baking powder

1/2 t. baking soda

2 1/2 c. flour

Sanding/decorating sugar. Mom prefers red. I most recently used sparkly lavender.

Cream oleo and brown sugar until fluffy. Try to refrain from eating too many fingerfuls of the combination. Beat in egg. Stir in dry ingredients. Dough will be stiff. Shape 1" balls. Roll in sanding sugar. Bake on lightly greased or parchment-lined cookie sheet at 350 F for 8-10 minutes.
