Preheat oven to 375 degrees.
Mix 2 c. vanilla wafer crumbs, 1/4 c. sugar, and 1/2 c. melted margarine; press firmly into 9x13 pan. Bake 8 minutes.
Cool. Reduce oven to 300 degrees.
Spread 3/4 c. strawberry preserves on the crust.
Take:
3 8 oz. packages of cream cheese
1 14 oz. can of condensed milk (NOT evaporated milk!)
3 eggs
1/2 c. lemon juice
Beat cream cheese until fluffy and then add each of the above, in order. Do not think that you will be clever and poke a couple of holes in the milk can and pour it out that way. Remove the lid. It will take forever to pour out of the bitty little holes you punched, and unless you have a four-year-old to hold the can and chatter while you mix, it will not be worth your time.
Pour over top of the preserves. Bake 45-50 minutes or until center is set. Cool. Chill thoroughly. Mom says "Garnish as desired." I have no recollection of what she means by this. I suppose you can cut up strawberries and lay them on top, if it's the right season for that. Hey, that's a good idea....
