Pepparkakor (Swedish ginger cookies)

3 1/2 c flour

1 t baking soda

1/4 t salt

1 1/2 t ground cinnamon

1 1/2 t ground ginger

1 t ground cloves

1/2 c margarine

3/4 c sugar

1 egg

1 t lemon zest

3/4 c molasses

Cream oleo, sugar, and egg. Beat in each additional ingredient. Chill overnight, divided into 4 parts and wrapped in plastic.

Preheat oven to 375 degrees. Roll to 1/8" and cut. (This may take an act of God, as these cookies are extremely sticky.) Bake on greased sheets 6-8 minutes. Cool on rack.
